After Easter dinner, if you're like us - you’ll likely have leftover ham—and I've got the perfect way to use it! This Ham and Potato Soup is a comforting, easy dish the whole family will love.

Ingredients (Yields 8 servings) :

  • 3 1/2 cups yellow diced potatoes (peeled or unpeeled)

  • 3 1/4 cups chicken broth 

  • 1 1/2 cups of cooked ham

  • 1/3 cup diced celery

  • 1/3 cup finely diced onion

  • 1 tsp white pepper

  • 1/2 tsp salt

  • 5 TBS butter (for non-dairy, use vegan butter instead!)

  • 5 TBS flour

  • 2 cups milk (for non-dairy, just use coconut milk! You don't notice the different at all!)

Instructions:

  1. Combine potatoes, broth, ham, celery, and onion in a large pot. Bring to boil. Simmer over medium heat for 10-15 minutes until potatoes are tender. Then add pepper and salt.

  2. In separate saucepan. Melt butter over medium-low heat. Add flour; cook and stir until thick, about 1 minute. Whisk in milk; cook and stir until thick, 4 - 5 minutes. 

  3. Combine milk mixture with main large pot; cook and stir until warmed through.

  4. Serve and Enjoy!
